BAKE! Hands-on Bread and Pastry Baking Vacations with Zingerman's Bakehouse Founded in 1992, Zingerman's Bakehouse in Ann Arbor is one of the country's most respected artisanal bakeries. In 2006, they opened BAKE!, a school designed to share their passion for traditional methods and great ingredients that gives home bakers the recipes, knowledge and confidence to recreate their renowned, old-world breads and tasty pastries in their own kitchens.
BAKE-cations! A Fantasy Camp for Home Bakers Each summer, BAKE! offers four-day class sessions that provide students with a comprehensive education in traditional bread and pastry baking. Taught by Bakehouse founders and their most experienced bakers, the classes put students at the bench with their hands in the dough and impart decades of learning in techniques for straight doughs, liquid sponges, naturally leavened sourdoughs, creaming method, yeasted sweet doughs, laminated doughs, pulling strudel, flaky pie crusts and much, much more. Over the years, classes have served baking novices as well as folks who've spent over 30 years baking in home and commercial kitchens. Zingerman's Bakehouse’s aim is to not only teach methods and recipes but also to share the joy of baking with people who are passionate about great food.
Midwest Living calls the BAKE-cation one of "ten trips you'll talk about" and a "cream-filled, chocolate-dipped opportunity to learn from the very best." All classes are taught at Zingerman's facility in Ann Arbor, a world-class university town in Michigan with great galleries, music, and restaurants including the famous Zingerman's Delicatessen and Zingerman's Roadhouse, recently touted by Travel + Leisure as the center of an American food revolution.
On October 17 and 18, 2009, BAKE! is offering a weekend Pastry BAKE-cation that features two days of their most popular pastry lessons. During the summer months, Zingerman’s offers three different BAKE-cation opportunities: one focuses on Bread session, one on Pastry session and a new BAKE-cation called the "World Tours" that teach both bread and pastry. Each four-day session runs Monday through Thursday from 8:00am to 5:00pm and includes breakfast and lunch.
What is Zingerman’s Bakehouse? By 1992, Zingerman’s Deli had been open for 10 years when Deli Founders Paul and Ari, in their ongoing efforts to improve the quality and flavor of the deli’s food, made the move to bake their own bread. They contacted their longtime friend and Paul’s former business partner, Frank Carollo, and asked him if he’d like to open a bakery with them. After many long discussions, much research and training from master baker Michael London (of Mrs. London’s in Saratoga Springs, NY), Frank, Ari and Paul opened the Bakehouse in September ‘92.
There were just eight of them then, possessed of lots of enthusiasm and courage, but not a lot of knowledge or experience. Among the original eight was Amy Emberling, who is now Frank’s co-managing partner in the business. Zingerman’s started as a simple artisan wholesale bread bakery with one customer. Driven by a passion for great bread and pastries and a desire to share them, they’ve grown and changed.
In 1994, Zingerman’s started making pastries; in 1996, they opened a retail store. And now, 130 of them gratefully serve over 100 wholesale customers and a steady stream of retail guests 7 days a week, 363 days a year. In 2005, Zingerman’s opened BAKE!, Ann Arbor's hands-on teaching bakery.
Without a doubt, Zingerman’s motivation for bringing artisan bread and pastry to Ann Arbor was partly selfish—they were tired of going to Paris or San Francisco to get the good stuff. Plain and simple, they love everything about great bread and pastry. They love to bake it. They love to eat it. They love to sell it. Zingerman's Bakehouse loves the extra bit of enjoyment it adds to the otherwise routine aspects of daily life. And they don’t ever want to be without it.
